What's wrong with raw vegetables?

Lettuce, tomatoes, cucumber, capsicum, beetroot (that does need cooking) served cold, rocket, spring onions, I'll stop there.

Toss it all in olive oil and balsamic vinegar.....

I can eat it, but never just by itself, and if I have the option my veggies will generally be cooked 🤷‍♀️ Just a preference!

Oooohhh…. now cooked lettuce is something I've not tried, but if you do them right, you can cook cucumber no problem!

Lettuce is ok cooked, it gets a little chinese cabbage-like. But it's my least favorite vegetable haha, cucumber however is lovely raw (with dip, dressing or marinated, or simply in a sandwich) or cooked 😊

What would we do w/out you Maggie? You truly are so intelligent & always keeping everything so real… I’ve been a vegetarian since I was about 16 yrs old… Salads, Soups, & Pasta are my jam… I definitely know the difference when I eat crappy or not enough at all… Trying to lose weight from all the damn steroids of cancer treatment has led me to a ridiculous almost starvation type of diet…I truly needed to find this today… Always thanking you for your wit & charm… I have researched some incredible people on Substack that provide amazing Mediterranean Recipe’s… They may be interested in collaborating w/you?!? I will try to find names for you & get back to you this week… PS I know your clients love & adore you… even the ones that may mind a little bit of cussing… In my opinion, why go w/dull & boring…As your special talent leaves us laughing & motivated… It’s part of your charm & what makes you stand out above all the rest!💙💕

Thank you so much for your lovely comment, Sheryl. The starvation type diet worries me a little though, have you discussed this with a nutritionist? Steroids will have an impact on our weight for sure, but we are not meant to starve ourselves, it doesn't help you lose weight anyway because your body will then just try to hold onto what it has and slow down your metabolism. Always here if I can help in any way.

I've learned how to prioritize veggies and fruits and nuts in my diet. I only eat what I like. A lot of veggies require fats--sweet potatoes, carrots, etc.--to realize their nutritional value.

This is a great idea, Maggie, for everyone.

Protip: pureed MAGAs are NOT a good source of magnesium, as much as some of us would like them to be, nor are they vegetables, as much as some of us think they are.
